摘要：Phenolic compounds from fruits and vegetables are disclosed which havebeneficial effects against variety of diseases states, such as Alzheimer's disease and otherneurodegenerative disorders. Using proteomics technology, a number of proteinsisolated from rat and mice brain have been identified and shown to undergo changes inexpression and/or modification in response to treatment with phenolic compounds. Themajority of the proteins identified herein were previously identified as differentiallyexpressed or modified in AD brain. The protein changes described that were altered inresponse to GSE or soy protein treatment were altered in a different direction to thechanges described in AD brain.
